Fried Rice

Happy New Year… er February!  Apologies for our absence these past few months.  I’m going to do my best to get some more posts up, starting now with a quick little snack.

I may or may not have mentioned my love for my wok in a previous post.  It’s really one of only two pans I own, but they are awesome pans.  The second is a Wagner cast iron skillet, it’s antique, it’s the best.  Anyway back to the wok.  I mostly used it for stir fry or pad Thai until recently, when I finally attempted home made fried rice.  This is arguably my favorite Asian food, I’ve gone out for Chinese and Thai with friends and just ordered fried rice.  I can’t believe I waited so long to try it at home, it’s an easy dish and now we have almost always have all the basic ingredients on hand.

I usually whip up this recipe for vegetable fried rice from allrecipes.com when we have leftover rice from another dish (like stuffed peppers).  Someday we’ll make this as a main dish for dinner and throw in some chicken or shrimp and maybe some green onions and other vegetables.  We also like our spice around here so I top off a little bowl with a few dashes of Sriracha.
